i feel spring coming and this brings me great joy.  it means the time has come for lighter fare, alfresco dining, morning coffee on my patio, listening to the intricate dance of birds chirping, and the visual comfort of watching trees bloom and flowers emerge from their winter slumber.  happy sunday to you.  xx, dana

a tasty love story
i'm still on a chocolate cake kick.  the cake is made with ripe bananas and dates for sweetness, but it's the chocolate and nut topping that caught my attention today.  this would be the perfect afternoon pick-me-up treat.  happy sunday.  xx, dana

i wanted a quiche the other day, a gooey cheese and broccoli quiche.  coming up empty handed on the  broccoli; the only veggie available was an onion.  i had a caramelized onion quiche years ago at this quaint pie shop and bakery, and remembered how much i enjoyed it; so naturally i set out to make a caramelized onion quiche.  here it is with a pre-made gluten-free crust.  it was pretty tasty with the added gruyere cheese.   happy sunday.  xx, dana

recipe

1 onion sliced, sautéed until caramelized in olive oil
4 eggs
2 cups heavy cream or half and half
1 cup shredded gruyere
salt and pepper to taste
1 ready-made pie shell

heat oven to 425 degrees.  fill bottom of pie shell with the cheese and onions.  whisk eggs, cream, salt and pepper; pour over the cheese mixture.  place the quiche on a baking sheet to prevent spills and bake for 12-14 minutes at 425 degrees.  reduce heat to 325 degrees and bake 35-45 minutes longer.

lately i've been on a chocolate cake kick.   it must be the transition from winter to spring that has me needing a little extra kick from these sweet cakes.  this one i really love as it has no flour or frosting but is just as good.  a simple dusting of cocoa, confectioner's sugar or a dollop of whipped cream with my morning coffee is all that is needed.  happy sunday.  much love my friends, dana

i fell in love with these sweet, little waffle donuts.   they could be made with a rice flour blend for a gluten-free option too.  simply sweet they are.  xx, dana

lately i've been on a juicing and healthy eating kick.   i've included more greens into the juicing, eat less processed foods, increased whole grains like oats into my diet; and it seems to give me a great boost of energy.  not only do i feel better, it also helps with my skin stay hydrated in the winter.     have a beautiful sunday.  xx, dana

ah, the simply joy of a lazy sunday...there's nothing quite like it.  lately, i've been enjoying the calm peace brought with winter.  it's such an introspective time; i like to hibernate, read, light fires and cook warm meals for my kids.  i'm also contemplating goals and aspirations and where i'd like this blog and the business to go for the next year and on into the future.  but, for now, i'll think i'll kick up my heels, light the fire and have a cozy cup of coffee.  happy sunday to you.  xx, dana
