this is one of liam's favorite breakfast foods. a puffy oven pancake that both alex and liam have grown up with. i've adapted it a bit from the betty crocker cookbook by adding more butter! the butter gives it the most amazing flavor.
just before serving the kids get to take turns sprinkling confectioners sugar on top...simple fun that makes them happy. ~dana
recipe
4 tablespoons butter
2 large eggs
1/2 c all purpose flour*we use gluten-free flour
1/2 c milk
dash of salt
1. heat over to 400 degrees. melt butter in pie plate in oven.
brush melted butter on side of pie plate.
2. beat eggs slightly in medium bowl with wire whisk. beat in remaining ingredients
just until mixed. pour into pie plate.
3. bake 25 to 30 minutes or until puffy and deep golden brown. serve immediately and sprinkle confectioners sugar on top.
